A lesser-known name from a lesser-known tea production area, but a staple tea close to our heart. A wonderfully smooth and refreshing brew that combines the warmth of a daily-drinker with the complexity of a high-mountain tea.

This year, we acquired several variants from the same farm—each harvested on different dates and with varying picking standards—to taste the subtle passage of time in every cup.

Sourced from high-altitude organic farms in the misty mountains of Shimen County, west of Hunan Province, Shimen Yinfeng (石门银峰) is a lesser-known gem among Chinese green teas—and one close to our hearts. It's a staple green tea in the region near our founder’s mother’s hometown, often enjoyed as a daily comfort and shared with guests as a symbol of hospitality.

Shimen Yinfeng means "Silver Peak," a nod to the tender, silvery buds and leaves, handpicked in early spring when the tea bushes are at their most vibrant.

Water Temperature: 80–85°C

Ratio: 3g / 150ml

Method:

Grandpa style: Place leaves in glass, top with water, refill as you drink.

Gongfu style: Use a gaiwan, short steeps (15–20s), 3–5 infusions.

Top-down method: Pour water first, gently add leaves on top and observe them dance.

Perfect for slow mornings, mindful afternoons, or introducing someone to the quieter beauty of Chinese green tea.
